Zucchini Pizza Boats

Ingredients:zucchini pizza boats, vegan, dairy free, gluten free, fitness food, clean eating, smart recipe, #fitfam, #fitinonline

  • 2 zucchini
  • 1/2 cup pizza sauce
  • 1/4 sliced red onion
  • 1/2 cup cherry tomatoes
  • 1/4 cup sliced kalamata olives
  • 2 tablespoons basil
  • *Optional – 1 tablespoon parmesan cheese


  1. Preheat oven to 400 degrees and use a non-stick cooking spray to coat an oven pan.
  2. Slice the zucchinis length-wise to form 4 halves.
  3. Use about a tablespoon of pizza sauce in each zucchini boat as a base layer of ingredients.
  4. Slice the olives, onion, and cherry tomatoes.
  5. Top zucchini boats evenly with olives, onion, and cherry tomatoes.
  6. Bake for 25 minutes, or until zucchini is tender and flexible.
  7. Use basil for final topping and enjoy!
